Adventures in Canning - THE SEQUEL

While we were at Albertson's a few days ago, the produce man came on the intercom and announced that they had boxes of Honeycrisp Apples for two dollars a box. Visions of food storage danced through my head and I made my dear husband go get as many as he could - much to his dismay. (His visions and mine are often a bit different.) We got four boxes of apples. So, here's the story of how a girl can make her visions become reality.

So, I haven't had apple chips since I was a little girl - you know, the proper homemade kind. I borrowed a dryer from my Mom and one from my friend Jenny - thanks - and VOILA!!. . . delicious crunchy snack. (Ashland loves them - Cadence, not so much.)

Here are some of my little helpers. Ben joined in the fun during his lunch break - and Cadence helped when she got home from school.

Isn't this a beautiful illustration of the process of making applesauce. I'm quite proud of both the pictures and the actual events.

At this point in the canning process, I was willing to let my girls get away with almost anything - I was so close to being done. You know that point?

The aftermath. I can't believe I did it - and all by myself. I've never attempted canning without my Mom. Twenty-two quarts of applesauce and a box of dried apples - What An Accomplishment - I'm still sitting here enjoying the little pops of the bottles as they are sealing - like music to my ears.

What a sweet comment from Ben. Aaahh. So jealous. That looks so yummy!! A huge pat on the back to you for doing it by yourself. You are awesome. What a FUN project. Why were the apples such a bargain?? Holy cow...that is cheap!

YOU should post a lesson on how to keep this all fresh enough to be food storage! I have a dryer, and instructions to use it, but do not know anything about STORING food. YOU are so ambitious and I can't believe you did this all by yourself , with two kids running around, then you finished and all survived. things like that scare me. I need some of your ambition! What are you using to squash the apple sause? After this post of yours here, I am really feeling some domestic spirit coming my way. How do I start?

Oh, and is cadence going to school somewhere else? I thought she was coming to your preschool.. maybe I missed something...

I'm tellin ya. you just have a lot more pioneer spirit in you than I do! Maybe if you lived nearby some of that could rub off on me!
